  • 1 1/2 cups all-purpose flour
  • 3/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • 1/3 cup vegetable oil
  • 1 egg
  • 1/3 cup milk
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 2 tablespoons turbinado sugar (optional, for topping)

Instructions:

  1. Preheat the Oven: Preheat your oven to 400°F (200°C). Line a muffin tin with paper liners or grease the cups with nonstick spray.
  2. Make the Batter: In a large bowl, whisk together the flour, sugar, salt, and baking powder. In a separate bowl, combine the vegetable oil, egg, milk, and vanilla extract. Add the wet ingredients to the dry ingredients and mix until just combined. Gently fold in the blueberries.
  3. Fill the Muffin Cups: Divide the batter evenly among the muffin cups, filling each about two-thirds full. If desired, sprinkle the tops with turbinado sugar for a crunchy topping.
  4. Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Let the muffins cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
