Quinoa Tabbouleh is a fresh and healthy twist on the traditional Middle Eastern salad, replacing bulgur with quinoa for a gluten-free alternative packed with protein.

Ingredients:

  • 1 cup quinoa, cooked and cooled
  • 1 cup chopped fresh parsley
  • 1/2 cup chopped fresh mint
  • 2 tomatoes, diced
  • 1 cucumber, diced
  • 3 green onions, sliced
  • Juice of 2 lemons
