  • 12 lasagna noodles

  • 1 bell pepper, chopped

  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions:

  1. Cook the Noodles: Preheat your oven to 375°F (190°C). Cook the lasagna noodles according to package instructions until al dente. Drain and set aside.
  2. Sauté the Vegetables: In a large skillet, heat the olive oil over medium heat. Add the onion, garlic, zucchini, yellow squash, bell pepper, and spinach. Sauté until the vegetables are tender. Season with oregano, basil, salt, and pepper.
  3. Assemble the Lasagna: Spread a thin layer of marinara sauce in the bottom of a greased 9x13-inch baking dish. Arrange a layer of lasagna noodles over the sauce. Spread a layer of ricotta cheese over the noodles, followed by a layer of sautéed vegetables. Sprinkle with mozzarella cheese. Repeat the layers, ending with a layer of noodles topped with marinara sauce and mozzarella cheese.
  4. Bake: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.
  5. Serve: Let the lasagna cool for 10 minutes before slicing. Garnish with fresh basil or parsley, and serve hot.
