  • 4 large bell peppers
  • 1 cup quinoa, rinsed and cooked
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 1 can (15 oz) diced tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup shredded cheddar cheese
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat the Oven: Preheat your oven to 375°F (190°C). Cut the tops off the bell peppers and remove the seeds and membranes.
  2. Prepare the Filling: In a large skillet, sauté the onion and garlic until translucent. Add the cooked quinoa, black beans, corn, diced tomatoes, cumin, chili powder, salt, and pepper. Cook for a few minutes until heated through.
  3. Stuff the Peppers: Fill each bell pepper with the quinoa mixture and place them in a baking dish. Top each pepper with shredded cheddar cheese.
  4. Bake the Peppers: Cover the baking dish with aluminum foil and bake for 30 minutes. Remove the foil and bake for an additional 10 minutes, or until the peppers are tender and the cheese is melted and bubbly.
