 Creamy Tomato Basil Soup is a rich and comforting soup made with ripe tomatoes, fresh basil, and a touch of cream. Perfect for a cozy meal on a chilly day or as a starter for a dinner.

Ingredients:

  • Canned tomatoes (diced or crushed)
  • Onion (diced)
  • Garlic cloves (minced)
  • Fresh basil (chopped)
  • Heavy cream
  • Chicken or vegetable broth
  • Olive oil
  • Salt
  • Black pepper
  • Sugar (optional, to balance acidity)

Instructions:

  1. Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, and sauté until softened.
  2. Add Tomatoes: Stir in canned tomatoes and cook for a few minutes. Add chicken or vegetable broth and bring to a simmer.
  3. Blend Soup: Use an immersion blender to puree the soup until smooth, or carefully transfer to a blender in batches.
  4. Add Cream and Basil: Stir in heavy cream, chopped basil, salt, and black pepper. Simmer for another 5-10 minutes. Add a pinch of sugar if needed to balance acidity.
