Ingredients:
- Green or brown lentils (1 cup, rinsed)
- Onion (diced)
- Carrots (diced)
- Celery (diced)
- Garlic cloves (minced)
- Vegetable broth (4 cups)
- Canned diced tomatoes (14 oz)
- Fresh spinach (2 cups)
- Olive oil
- Cumin
- Salt
- Black pepper
- Bay leaf
Instructions:
- Sauté Vegetables: In a large pot, heat olive oil over medium heat. Add diced onion, carrots, and celery; sauté until softened. Stir in minced garlic and cook for another minute.
