Ingredients:

  • Quinoa (cooked and cooled)
  • Black beans (canned, drained, and rinsed)
  • Cherry tomatoes (halved)
  • Red onion (diced)
  • Bell pepper (diced)
  • Fresh cilantro (chopped)
  • Lime juice
  • Olive oil
  • Cumin
  • Salt
  • Black pepper

Instructions:

  1. Combine Salad Ingredients: In a large bowl, mix together cooked quinoa, black beans, cherry tomatoes, red onion, bell pepper, and chopped cilantro.
  2. Make Dressing: In a small bowl, whisk together lime juice, olive oil, cumin, salt, and black pepper.
  3. Toss Salad: Pour the dressing over the salad and toss gently to combine.
  4. Serve: Chill in the refrigerator for 30 minutes before serving for enhanced flavors.
