Caprese Stuffed Chicken is a flavorful and elegant dish that features juicy chicken breasts filled with fresh mozzarella, tomatoes, and basil.
Ingredients:
- Chicken breasts (2, boneless and skinless)
- Fresh mozzarella (4 ounces, sliced)
- Cherry tomatoes (1 cup, halved)
- Fresh basil leaves (1/4 cup)
- Balsamic glaze (for drizzling)
- Olive oil (2 tablespoons)
- Salt and pepper to taste
Instructions:
- Preheat the oven to 375°F (190°C).
- Cut a pocket in each chicken breast and stuff with mozzarella, cherry tomatoes, and basil.
- Season the outside of the chicken with salt and pepper. Heat olive oil in a skillet and sear chicken on both sides until golden brown.
- Transfer to a baking dish and bake for 20-25 minutes until cooked through.
- Drizzle with balsamic glaze before serving.
