Ingredients:
- Dried lentils (1 cup, rinsed)
- Vegetable broth (2 cups)

- Taco seasoning (2 tablespoons)
- Corn tortillas (8)
- Avocado (for topping)
- Fresh cilantro (for garnish)
Instructions:
- In a pot, combine lentils and vegetable broth. Bring to a boil, then simmer for 20-25 minutes until tender.
